for faster and continous shooting on a moving subjects and continous burst for water , check your shooting mode and choose AF-C , shoot with high ISO 800 even on outdoors then high shooter speed !
shooting RAW will have a small LAGS

I have the same problem for fast photo secuences at sport mode. The problem is the memory SD you use, for fast secuences you must use for example a SanDisk Extreme III or SanDisk Extreme IV, actualy I have the Extreme III and goes perfect for bikes races.

The video function is actually more of a handy tool to capture some specific moments in video format, more of a addon.
